KEY LIME PIE FOR NATIONAL RAD TECH WEEK

if you've not had key lime pie let me tell you, you need to try, it's tart, sweet, tangy, creamy, and ultra delicious with a dollop of homemade whipped cream and served fridge-cold

 if you don't know it yet, lemme tell you, i am a radiological technologist. i chose this career when i was 19, went to my local community college and got into a rad tech program to take images of bones for a living. i love it and find it absolutely gratifying.

TO MAKE THE CRUST

mix graham cracker crumbs with sugar, add in melted butter and mix. press evenly into the bottom of a pie tin. bake at 375 degrees for 8 minutes. pull from oven to cool and prepare the filling.

THE KEY LIME PIE FILLING

turn oven temp down to 350 Fahrenheit. in a clean bowl, beat 4 egg yolks until thick. to the egg yolks add the sweetened condensed milk, mix well. gradually add key lime juice, mixture will become thick. scrap down sides of the bowl and mix until uniform in color. pour into prepared pie crust. cover crust with foil and bake for 8 minutes. 

if you want to really celebrate rad tech week, be sure to turn the pie into a radiation symbol!

 prepare the key lime filling: turn oven temp down to 350 Fahrenheit. in a clean bowl, beat 4 egg yolks until thick. to the egg yolks add the sweetened condensed milk, mix well. gradually add key lime juice, mixture will become thick, scrap down sides of the bowl and mix until uniform in color. pour filling into prepared pie crust. cover crust with foil and bake for 8 minutes.

allow pie to cool completely. refrigerate pie, and serve cold.

  • 1/4 sugar
  • 1 package of graham crackers, prepared into crumbs
  • 5 tablespoons of unsalted butter
  • 4 egg yolks
  • 1/2 C. lime juice [nelly's key lime juice]
  • 14oz can of sweetened condensed milk
