For a classic nostalgic treat Milk Bar's Birthday Cake Truffles are the way to remember the days of eating and entire funfetti cake by yourself.

step 2: build crumbs, birthday cake soak, and tear up previously baked cake
step 3: build cake balls!
step 4: coat cake balls in melted vanilla chocolate, (hopefully you don't burn the waxy crap out of the first batch of melted white chocolate like i did) toss in crumbs.

MOMOFUKU MILK BAR BIRTHDAY CAKE TRUFFLES
Combine the cake scraps and vanilla milk in a medium sized bowl and toss with your hands until moist enough to knead into a ball. If not moist enough add up to 2 more tbsp more vanilla milk and knead it.
Using a small ice cream scoop, portion out 12 even bals, each half the size of a ping-pong ball. Roll each one between the palms of your hands to shape and smooth into a round sphere.
With latex gloves, put 2 tbsp of white chocolate in the palm of your hand and roll each ball between your palms, coating it in a thin layer of melted chocolate; add more chocolate as needed.
Put 3 or 4 chocolate-covered balls at a time into the bowl of birthday cake sand. Immediately toss them with the crumbs to coat, before the chocolate shell set and no longer acts as a binder.
Refrigerate for at least 4 minutes to fully set the chocolate shells before eating or storing.
Truffles will store in an airtight container for up to 1 week in the fridge.
1 recipe birthday cake
2-4 tbsp vanilla milk
3oz white chocolate, melted
1 c. birthday cake sand.

Read all recipes to completion, that means, read every sub recipe. Even read the recipes that may even partially look associated with the 'mother recipe,' just read it. On the day I made the Birthday Cake I had tried to turn out two milk bar cakes in one day, that was over a very far fetched aspiration. I was only able to complete one cake with an assistant cake helper and by the time the cake was completed, it wasn't even ready for consumption, it still required a few hours in the refrigerator.

so as i mentioned before in my advice up top; read all instructions. i started with my sights on completing the milk bar birthday cake, but having already completed the apple pie cake that same day left very little time to start a second one. i hastily made the birthday cake and tossed it into the freezer to store for the following day. the following day's cake duties turned into the weekend project. the weekend project turned into the following gym's rest day baking adventure, which then turned into another whole week. so by the time i pulled the cake out of the freezer i was afraid of what smells the cake had potentially taken on and was weary of the time it would take to complete the cake. one genius idea from the momofuku milk bar book is this amazing alternative to the traditional layer cake; to make birthday cake truffles.
